Description

Composed of all five Bordeaux varieties ,Papillon is our Cabernet based red wine. The goal was to make a stand— alone wine that incorporates all the majesty of Cabernet Sauvignon with the subtleties of Cabernet Franc and Merlot, and the power of Petit Verdot and Malbec. The label is a photograph taken by our good friend and fellow winemaker, Greg Gorman.Winemakers Notes Dark garnet in the glass, this wine is highly aromatic with notes of ripe black cherry, anise, licorice, shaved dark chocolate, rosemary and charred meat. The entry is immense with bright ra spberries and fresh cherries, transitioning to a mid-palate of amaretto, sandalwood and hint s of high mountain forest and coastal scrub . Textured tannins and notes of toasted coconut round out the palate as the wine finishes with lingering sweet oak.Maturation Aged 16 months in French oak, 40% new – Orin Swift
