Grand Cru, territories where a great and important winemaking tradition is still present. Intense and creamy, this
brut white sparkling wine is made from a
multi-varietal blend: 80%
Pinot Noir and 20%
Chardonnay.
Pinot Noir is an international grape variety that also adapts well to Italian soil. It ripens early and is very delicate, thus representing a real challenge for every grower. It prefers calcareous and schistous soils of volcanic origin, rich in chalk, and is slightly susceptible to rot. Of all the red grape varieties, it is considered the noblest and the most complex to interpret when tasting. The
Chardonnay grape variety, ripening rather early, is at risk of spring frosts; it is widespread throughout much of the country and beyond, adapting to various soil types and climates.
Vinification still takes place in the old cellar thanks to an ancient press, but the must is collected in modern truncated steel cones. Once filled, the bottles are taken to the cellar’s chalky tunnels, where they remain for at least 3 years, undergoing continuous revolving. Born in the
