Description
The Bonus Passus from the Bonpas estate is a red wine made from Grenache Noir, Syrah, and Mourvèdre grapes grown in the renowned vineyards surrounding the village of Châteauneuf-du-Pape, on sandy and sandstone soils facing south and southeast. The estate’s name derives from “Bon passage,” referring to the safe crossing of the Durance River that once connected Rome to Avignon.
The wine making follows the traditional Rhône Valley method to achieve an optimal blend that enhances the characteristics of each grape variety. The techniques of pumping over and racking allow for delicate extractions in the final phase of fermentation. The pomace is immersed in the hot must for a true infusion that softens the tannins and gives the wine its roundness, while preserving the aromas of ripe red fruits. Maceration lasts for three weeks and 15% of the cuvée ages for eight months in French oak barrels.
It presents a deep garnet color with violet reflections. The nose is dominated by intense aromas of red fruit preserves, cherry, and small stone fruits. On the palate, the texture is silky and enveloping, with flavors of ripe plum and greengage plums balanced by a slight freshness on the finish.
Perfectly pairs with rosemary lamb shank, duck confit, or flavorful vegetarian dishes.
