Description
The vineyard, adjacent to the company, was called “doctor’s field” because around the mid-twentieth century the owner was the village doctor. The wine comes from a selection of only Rhine Riesling grapes grown at an altitude of about 280 meters above sea level. and vinified in steel. It is bottled towards the end of spring and put on the market after about 40 days. Campo Dottore always maintains a marked minerality even in the driest years thanks to the large temperature range from which the vineyard benefits and the copious quantity of limestone present in the soil. In tasting it offers the classic notes of the vine, with yellow fruit in the first months of life and the progressive emergence over the years of sulfur and hydrocarbon notes. The most suitable combination is certainly with fresh, summer dishes, but it also does not disdain oily fish (avoiding killer whales, whales and sperm whales). More pleasant if served around 8 °C
