Description
Still white Trentino DOC, 12.5% ABV, produced by Cavit. 100% Müller Thurgau, 0.75 l bottle, 2022 vintage. A wine born from the passion of Trentino winemakers, a tribute to the aromatic grape native to Geisenheim, Germany. The grapes come from Riva di Vallarsa in the Leno Valley, Cimone on the slopes of Monte Bondone, and Stenico in the Giudicarie Valleys. After careful selection in the vineyard, the bunches are destemmed and gently pressed. The must is rapidly cooled and left in contact with the skins for several hours to facilitate aromatic extraction. Subsequently, it is softly pressed to separate the must from the solids, and finally the “pied de cuve” is added to initiate alcoholic fermentation, which takes place in stainless steel tanks at a controlled temperature of 16–18°C. Aged in stainless steel. An intense, very clean bouquet of remarkable complexity, with aromas reminiscent of fresh citrus, peach, sage, elderberry, and nettle. Pale straw yellow with greenish highlights. Pleasantly fresh, lively, and persistent on the palate.
