he 2023 Philippe le Hardi Bourgogne Blanc is medium yellow in color and opens with aromas reminiscent of sun-dried hay in a summer field. On the palate, it reveals ripe apple flavors layered with a gentle shading of oak, bringing balance and charm. A superb match with Poulet Gaston Gérard—the Dijon specialty of chicken baked in white wine, mustard, and Comté cheese—where the wine’s orchard fruit and subtle oak cut through the richness and echo the dish’s creamy, savory depth.
