”TASTING NOTES Our 2012 Chateau Walla Walla Masterpiece Red is a blend of the best fruit from the famed Walla Walla AVA. This wine displays qualities of the finest French Bordeauxs Cassis, Earth, Tobacco, Leather, Licorice, Spice, and Herbsall of these aromas appear again on the palate and extend on to a beautiful finish that also contains a soft, velvety texture.WINE MAKING NOTES Harvest Date From September 15 to September 21, 2012 Brix at Harvest 23.5 to 23.9 Yeast Zymaflore F10Saccharomyces cerevisiae Fermentation The grapes were harvested by hand at optimal ripeness and processed via gravity through the crusher-de-stemmer into small batch fermenters. The fermentation was punched down by hand twice daily and fermented to dryness. Some extended maceration on the skins occurred to provide structure and complexity. The wines were barrel matured 6 months in 100% new French oak barrels before being racked to neutral oak barrels where oak and grape pigments and tannins were allowed to integrate another 18 months.” – Chateau Walla Walla
