Description
An electric dessert wine from the southern reaches of France. Rivesaltes is a historic vin doux naturel, referring to a French fortified sweet wine. It’s made of the indigenous Grenache Gris grape, in this case from a single tiny parcel that was once worked by Hervé Passama before his passing. This winery no longer produces anything, this is a reserve bottling selected by the importer and not to be missed.
Fermented during a week long maceration on the skins. Skin contact for white grapes to pull out more aromatics is a common practice in sweeter, aged styles. Moreover, this is a Racino style, meaning it is purposefully allowed to become oxidative with prolonged aging and exposure to the elements. Despite this it retains a profound acidity that provides a structural backbone to pair with the notes of meyer lemons, preserved stone fruit, dried lilies, African coffee, and orange blossom honey.
