Description
The
Verdicchio di Matelica from the
Collestefano winery is a white wine with an excellent structure that fully expresses its production territory and has earned the
DOC label. This was possible thanks to the experience of the winery owner, who carefully researched and selected the grapes. The typical production area is the
hills of the Marche, where the good temperature range and the clayey, calcareous soil allow for excellent grapes; the latter are also grown entirely organically. Regarding the production of Verdicchio di Matelica from the Collestefano winery, only Verdicchio grapes are used. The
harvest begins with the manual harvest in the second half of September, with the bunches being placed in small crates after being carefully selected to ensure only the best and ripest bunches are chosen. The grapes are then transferred to the cellar where they undergo a
soft pressing. The next step is the
vinification process, which begins with a slow, low-temperature
fermentation without malolactic fermentation, even if the grapes have a high level of acidity. This is followed by
maturation, which lasts at least four months directly on the fine lees in stainless steel, and concludes with a further period of
refinement in the bottle to ensure the wine’s proper balance. The result is a harmonious and elegant white wine that fully reflects its production area.
