Darioush Distinction Crafted to showcase the remarkable complexity, structure and age-worthiness of this variety, Darioush Signature Shiraz is coaxed to higher heights via meticulous farming of our cool, southern Napa Valley vineyards which naturally restrain the vigor of this expressive varietal while intensifying its inherently rich and spicy character.Tasting Notes The spice-laden aromatics of the 2014 Signature Shiraz are enhanced with dried rose petal and notes of palo santo. Impressively textured and dense on the palate, this dark purple hued wine exhibits rich layers of black raspberry, anise and currant while its earthy core adds intrigue with spiced Mexican chocolate and freshly ground espresso. Ripe, integrated tannins unfold to reveal a soft, persistent and deeply satisfying finish.Vinification With meticulous attention to detail, Darioush Signature Shiraz is farmed and hand-harvested into small 28 lb. baskets, clusters and berries are sorted twice, before and after de-stemming. Cold soaking for four days in a combination of open top and traditional tanks, with gentle pump overs and extended maceration during fermentation allowed for optimal color extraction and tannin management. The wine was aged in new Siruge, Damy and Francois Freres French Oak barrels for 18 months. – Darioush
