Cantinadei Vini Tipici dell” Aretino lies in the rolling Tuscan hills, in the province of Arezzo, which is ideally suited to the cultivation of high quality grapes. All the Chianti from the Cantina is made in the typical Tuscan-Governo style. The grapes are hand picked exclusively, then accurately sorted into boxes. They are then cold pressed, under temperature-controlled conditions with subsequent prolonged maceration in order to enhance the fragrances and retain the color continuity from the skins. The unique from of aging presents us with a prestigious, full bodied, robust wine that can be served on many occasions. A fine complement to roasted and grilled meats, game and seasoned cheeses.Vineyard Characteristics 50 hectares of the Vineyard Montesansavino in Civitella, Arezzo are located 300-350 meters above sea level with soil of a deep porous sandy/clay structure, good hydration and moderate drainage, with mid-day exposure to the sun.Form of Planting Cordone Speronato, with an average of 2200 vines per hectare… vines are planted alongside stakes wiredtogether in three levels. As the plant matures its pruned in such a way that it grows up the stake and akong these clothesline-type wires, affordingmaximumexposure to the sun and air flow.Harvest and Vinification A special selection of grapes hand harvested in the end September 15-20th to the beginning of October 8-10th. traditional Tuscan-Governo style with grapes that have been cold pressed under temperature control with prolonged maceration in order to enhance the fragrances and retain the color continuity from the skins. After the traditional vinification the juice is seperated and aged for 2 years in four different ways10% of the juice goes into small, 2 year old Missouri oak of medium toast 60% goes into medium sized Slavonic oak barrels and 20% is conserved in stainless steel. After the wood aging, the wine is blended together and kept for one month to rest, under temperature control, in stainless steel.Sensory Characteristics The color is a deep ruby red that tends to granite with age.
