Plots: 100% Premier Cru in Hautvillers – Old vines (35 years) for Pinot Noir – 25 year old vines for Chardonnay
Soils: Chalk, Clay-limestone, Sand
Pruning method: Chablis
Winemaking: Blended rosé – Red wine made by maceration at the end of harvest from our old Premier Cru Pinot Noir vines – Malolactic fermentation completed – Fermentation and secondary fermentation at low temperature (approx. 16°C)
Dosage: 6g/L
Disgorgement: Early 2025
Food pairings: Fresh salmon with white rice and lemon cream sauce
