Creating a white wine that speaks to the varietals bright, crisp character is the goal of our Sauvignon Blanc every year. Sourcing Sauvignon Blanc in Napa Valley can, at times, be as diverse as Cabernet. We search for vineyards that develop fruit which lends towards tropical notes vs. grassy character. Balancing tropical character with crisp, bright acidity, we hope to develop a wine that showcases the style we enjoy making and drinking Our Sauvignon Blanc vineyard sources are in St. Helena, Rutherford and Pope Valley and Girards own vineyard, which lies on the opposite corner to the Culinary Institute in St. Helena.Vintage NotesIn spite of the drought, we consider the 2014 vintage in Napa Valley a high-quality vintage with depth of flavor and excellent character. The weather was near perfect and we were blessed with an abundant crop. Our Sauvignon Blanc grapes came in at an even pace with well developed fruit character.Winemaking Notes Picking our Sauvignon Blanc grapes at a level of ripeness that showcases its fruit while still leaving behind enough acidity to create a balanced wine is our focus every vintage. The fruit is kept separate and slowly fermented at cooler temperatures in stainless steel tanks. After completing primary fermentation we restrict any secondary fermentation malolactic fermentation to help maintain the crispness of the acid. Leaving the wine on its lees for a short amount of time helps develop the mouthfeel that tends to add to the wines complexity.Flavors & Aromatics Aromatics promote lemon, passion fruit and stone fruit. The palate begins with bright, crisp acidity that wraps around crisp apple, mango and peach notes. Citrus fills the finish with lemon zest and fresh squeezed tangerine. – Girard
