Just inky-purple mouth-filling fun, Défier is a California-twist homage to Cru Beaujolais. We sort whole clusters into a giant egg-shaped tank, seal it up and let it do its thing; then press the carbonically-fermented fruit and age the wine for 10 months in neutral French oak. Velvety and super fresh all at the same time.
