A subtle oak background adds length, while allowing the fruit to shine through.SERVING SUGGESTION Serve chilled with seafood, chicken or creamy pasta dishes.VINTAGE CONDITIONS The 2014 vintage was one of climatic extremes across most of South Eastern Australia, but careful vineyard management saw high quality fruit delivered to the winery. A very cold and relatively wet winter prior to the growing season was followed by a warm and windy spring. Rainfall was low, requiring early season supplemental irrigation to aid the promotion of ideal vine canopy development. Summer was very warm to hot, ensuring minimal disease pressure in the vineyard and allowing fruit to ripen to its optimum. Harvesting was carried out in the cool of the night to minimise phenolic pick up, ensure acid balance and best retain the varietal Chardonnay characters.WINEMAKING Our winemakers aim for complexity of flavour and great drinkability when making Jacob’s Creek Chardonnay so they select different parcels to cover the broad spectrum of varietal flavours. Some parcels are fresh, lively and citrusy, while others contribute more rich melon and peach flavours at the riper end. To get the right mix and also achieve the best possible quality, the winemakers spend a lot of time in the vineyard – looking at and tasting every block of Chardonnay, and making picking decisions to meet their specific requirements. Once in the winery, the fruit is handled carefully to minimise phenolic extraction from the skins, thus creating wines that are soft and flavoursome. As the retention of primary fruit flavors is a key objective, the juices are clarified and fermented using neutral wine yeasts. After primary fermentation, some of the parcels are given extended yeast contact, a portion go through malolactic fermenttation, and selected parcels are matured on French oak, all of which adds complexity to the final blend. – Jacob’s Creek
