”Philosophy With attractive aromas of black fruit and spice, this smooth, ready to drink cabernet sauvignon is made with the same care as the highest quality, traditionally crafted Bordeaux styled wines. Our grapes are hand-picked and sorted by the berry for consistent quality and flavor. JUSTIN Cabernet Sauvignon then spends more than a year in traditional small oak barrels to impart a depth and complexity, expressing the influence of ancient limestone soils and the unique climate of Paso Robles and bringing out a classic cabernet character in this exceptional wine.Vintage Notes The 2014 vintage began with an extremely dry and mild winter with bud break occurring about 2-3 weeks earlier than normal. Warm weather continued but winds during flowering caused some uneven berry-set, reducing our yields and opening the clusters to drying breezes and sunshine. Warm weather with some humidity continued through mid-July with heat spikes over 100 for brief periods in June and early July. Veraison started a couple of weeks earlier than usual and was complete by mid-August. Our first block of white grapes came in on August 13th, tying 2004 for our earliest harvest start. The second half of August saw cooler temps that allowed the red grapes to better harmonize ripeness and maturity. The heat returned in early September and remained for the rest of the month. The characteristically cool nights helped the maturing grapes retain great acidity, continuing until the final blocks of cabernet fruit were harvested just before the end of October.Vinification Fermentation Stainless steel open and closed top tanks with UV43 yeast and twice daily pumpovers.Tasting Notes by Jim Gerakaris, CWE – JUSTIN Winery Sommelier AppearanceDark ruby purple core lightening to medium intensity at the rim with moderate staining on the glass.AromaAromatic black fruit of cherry and blackcurrant jam, baking spice, dried leaf and sweet tobacco.PalateFull bodied with bright black cherry, blackcurrant and berry fruit with an underpinning of oak barrel accents on entry. The mid palate shows continued fruit with savory herbal notes, mint and a hint of violet. The finish is clean, long and layered with lingering dark fruit surrounded by soft chewy tannins balanced by crisp acidity and subtle floral notes. The 2014 JUSTIN Cabernet Sauvignon is a versatile red wine that pairs well with most red wine friendly dishes and a little more.
