Description
This cuvée is blend of Grenache and Cinsault, a light and fresh tasting red variety ideal for consuming as a young wine. Farming is organic, certified as such since 1998. This is not a popular method in the region, leaving Dardé an eccentric but ecological-minded rarity.The fermentation begins spontaneously with wild yeasts during macerations of the skins with the grapes pressed off before intense extraction for a more medium-bodied wine. Bottled without filtration or fining and no chemical correctives, just a touch of preserving sulfites. This pairs well with pan-fried pork chops, moussaka, bacon cheese frittata, pepper steak, or smoked tofu
