Grilled and roasted fish, stewed and gratin vegetables, cheeses.
Manual Harvest Vinification
in 25 Kg boxes placed directly for pneumatic press. The must resulting from the pressing fermented at a controlled temperature of 14-16ºC. After alcoholic fermentation, it aged on the fine fermentation lees in a stainless steel tank lined with French oak voussoirs, with weekly bâtonnage for 9 months.
