Description
Extra Brut Classic Method sparkling wine from Trentino-Alto Adige, produced by Pojer and Sandri. Blend of 65% Chardonnay and 35% Pinot Noir. Very fine perlage with a persistent crown. With a mature bouquet, it clearly recalls the characteristics of Chardonnay, while with aging, notes of vanilla, almond paste, hazelnut, hay, moss, and flint emerge. On the palate, it is extremely dry and frank, with plenty of character and a substantial structure. Secondary fermentation in the bottle occurs in spring using base wines from two different vintages and two different varietals. Disgorgement occurs after a minimum of 36 months on the lees.
