Our 2022 Sauvignon Blanc was picked on August 27th at 20.5 brix for 3.2pH. As usual, the light and heavy juice pressings were separated for fining and fermentation. Shortly after the end of fermentation, the two wines were combined and aged 7 months in concrete on fine lees.
The finished wine exhibits aromatics of lemon, boxwood and grapefruit.
The wine presents with a full mouthfeel structured by a lingering natural acid.
