Champagne Polisy Brut, Brut Classic Method, 12% ABV, produced by André Beaufort, 2005 vintage. Blend of Chardonnay and Pinot Noir. 0.75 L bottle. This Champagne is born from an organic farming philosophy begun in 1969. The grapes come from vineyards in Champagne, partly in Grand Cru Ambonnay and partly in Polisy. Fruity aromas on the nose, particularly yellow fruit, accompanied by hints of wild herbs. Fine perlage. On the palate, the wine is soft, persistent, and refined.
