Description
Aged in Solera style in French oak barriques Caballo Loco is produced based on the original Cabalo Loco Number 1 and a selection of the best vineyards in Chile. It is a wine with complexity, character and elegance obtained through an extensive aging process. This Ultra Premium Limited production wine is a blend of 26 vintages between 1992 and 2017. Each edition is unique, based on the Solera system, where 50% of the mixture is from the previous edition and the other 50% comes from the best lots of new wine. At the end of the aging period of 24 month in French Oak barrels, the new wine was assembled with the wine of the previous edition (Number 18). Then 50% of this new edition (Number 19) is bottled and the other 50% returns to barrels to continue aging and wait for the new harvest. Full-bodied and ripe, this wine shows elegant aromas of dark cherries, cassis, and espresso with underlying sweet cooking notes of thyme and hints of paprika. Oak is well-integrated, with a luxurious texture and fine-grained tannins. On the smooth palate, the wine is warm, spicy and round, exhibiting concentrated plum flavors, pepper and a light note of vanilla. Finish is elegant and pleasantly lingering. Pairs perfectly with red meats (veined loin, entrails, Angus), lamb, baked pork and game. It goes well with appetizers such as serrano ham and strong cheeses (Gruyere, Edam and Brie)
