Hautes Cotes de Nuits is a still red
AOC wine with a refined character and a fruity aftertaste. This spirit is produced in France, specifically in the village of Gevrey-Chambertin, located in the central Burgundy region. The producing winery, known as
Domaine Marchand Frères, is a family-run business passed down from generation to generation: alongside it, a winemaking tradition dating back to the 19th century is carried on with professionalism and passion. The current owner is Claude Marchand, who has led the company to significant commercial expansion since 1983. Hautes Cotes de Nuits is produced entirely from Pinot Noir grapes. During the harvest period, the must obtained from the grapes is extracted manually, while the vinification process is carried out using stainless steel containers: here, cold maceration takes place, after which alcoholic fermentation begins, lasting 10 to 12 days. The next step is malolactic fermentation in barrels, in which the malolactic acid of the ethyl compound is transformed into lactic acid thanks to the action of bacteria. The final phase consists of aging, a procedure in which the wine is left for 18 months in oak barrels.
