Description
San Marzano Talò Primitivo di Manduria DOP is one of the most well-known
still red wines from
Puglia, and its grape varieties are widely cultivated in the provinces of Taranto and Brindisi, particularly in the areas of
Manduria,
Lizzano, and
Sava. The historical origins of these vines date back to Dalmatia, where the grapes called Plavac Mali, similar to Primitivo, came from, as well as the Californian Zinfaldel, which is very popular in the United States.
Primitivo takes its name from the characteristic of the grapes of ripening earlier than other varieties present in the region, and is used in quantities of 100% to obtain the renowned final product.
Salento, thanks to its Mediterranean climate characterized by high summer temperatures and medium-low rainfall, represents the ideal climate for the growth of this
grape variety, which in particular areas, such as
San Marzano, at 100 meters above sea level, offers optimal yields. The
vines are still grown using the old bush method inherited from the ancient Greeks on clayey soils with a good presence of gravel. A typical example of an excellent

San Marzano Primitivo di Manduria Talò, produced by the
San Marzano winery in this very area of Salento. All the typical organoleptic characteristics, such as the ruby red color and the aromatic flavor, are obtained thanks to the
vinification process which involves thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days.
